Chocolate cheesecake ultimate pleasure

Today a recipe, which is all about chocolate! Chocolate = pleasure :P As simple as that. Chocolate cheesecake with chocolate ganache, here is how to make it! :-)


180 g cookies (e.g. Digestive)

45 g butter or baking margarine

1 table spoon cocoa

500 g cottage cheese

150 g dark chocolate

145 g white sugar

1 table spoon potato starch

3 eggs

3 egg yolks

160 g cream 15 or 18%

1/2 tea spoon of cocoa

80 g dark chocolate or 40 g dark and 40 g milk chocolate

125 ml cream (30 - 36%)

Step by step

Combine together, preferably in a food processor, cookies, butter and cocoa. Transfer and spread the crunch (it should have a wet, sand like texture) into the prepared baking form (22-23 cm) lined with baking paper. Let the bottom cool down in a fridge for about 30 minutes.

In a meantime, in a small saucepan melt the dark chocolate. You can melt it either in a water bath or simply add a couple droplets of cream and remove from the heat. Put the chocolate aside and let it cool down. Then whisk together cottage cheese, white sugar, potato starch, eggs, egg yolks, cream and cocoa. Mix the ingredients until you obtain a homogeneous batter, but not to long to avoid air bubbles. When ready transfer the batter onto the pre-cooled bottom and bake in 180 °C for approximately 45 minutes up to 1 hour. The cheesecake should be baked in a water bath (the baking form is then placed in a bigger form filled with water). You can also place a container/form filled with water underneath the cheesecake. When ready let the cake cool down in a fridge for a couple hours or preferably overnight. As a final touch prepare the chocolate ganache by warming up cream (up until boiling) and adding pieces of chocolate. Be sure to remove the cream from the heat when you add the chocolate bites. When ready spread the ganache on the top of the cheesecake and decorate according to your wish. Enjoy and bon appetit! :-)
