I am a huge fan of pound cake! First, it's super quick and easy to prepare, second, it allows dozens and dozens of combinations. Just think, chocolate chips and chocolate glaze? Or blueberries with blueberry glaze or plain pound cake with an orange touch? In fact you can use almost all seasonal fruits. add nuts, raisins, cranberries, finally to get into more Christmas mood candied fruits. A simple pound cake can make you really creative. ;-)
This time I decided to try something new, prepare chocolate pound cake, with chocolate chips. To balance the sweetness I added some lemon zest to the batter and prepared a lemon glaze to make the cake even more refreshing. It came out really great and balanced! Here is the recipe. :-)
275 g flour
160 g butter
135 g white sugar (160 g if you like a bit sweeter cakes)
10 g vanilla sugar or 1 tea spoon vanilla extract
150 g Greek yogurt or natural yogurt
2 tea spoon baking powder
150 g chocolate chips
lemon zest from 1 lemon (you can use 1 lemon or half, depending on your preferences)
2 tea spoon lemon juice
200 g (approximately) icing sugar
Step by step:
In a bowl whisk butter with sugar (white and vanilla) until you obtain a fluffy, pale yellow mixture. Then add eggs, one at a time until ingredients combine. In a separate bowl sift and mix flour and baking powder. Now combine both dry and wet ingredients using spatula. Add yogurt to facilitate mixing. Finally, blend in chocolate chips and lemon zest, only until everything combines. Pour the batter into the prepared, lined with baking paper loaf form. Bake it in 170 °C for approximately 55 minutes or until the cake tester comes out clean. Let the cake cool down.
In a meantime prepare lemon glaze by mixing 2 tea spoon of lemon juice with approximately 200 g of icing sugar. Pour the glaze onto the pre-cooled cake. For all the chocolate lovers, you can melt a couple of chocolate pieces and pour the chocolate sauce on top of that. Just wait until the glaze solidifies. :-) Bon appetit!
