Raspberry -chocolate heaven!

Hello everybody!

Do you sometime have a huge craving for something chocolate, rich and moist? And it would be even better if served with some cream based addition and maybe also some fruits? Yes, it all sounds delicious and it can all be so simple! This recipe for a chocolate raspberry cake covered with creamy frosting is totally on point! So do not hesitate, just grab some beautiful raspberries, chocolate bites and get yourself going!


240 g flour

180 g white superfine sugar

100 g brown sugar

70 g cocoa

2 eggs

1 egg yolk

125 ml milk

125 ml yogurt natural

125 oil

125 ml warm water

2 table spoons vanilla sugar

80 g dark chocolate (chopped)

1 1/2 tea spoon baking powder

1/2 spoon baking soda

a little bit of salt

For the frosting:

200 g cream cheese

80 butter/baking margarine

2 table spoon milk

100-200 g icing sugar (here do as you prefer for the frosting to taste as you like it the most)

50-100 g raspberries

Step by step:

In a large bowl sift together dry ingredients, flour, cocoa, all the sugar types, salt, baking powder and baking soda. Then add other ingredients starting with eggs, egg yolk followed by milk and oil. Mix using wooden spatula until all the ingredients blend in. Pour the warm (freshly cooked or boiling) water into the batter and mix until you obtain a smooth and homogeneous mixture. As a last step fold in chopped chocolate bites into batter and mix carefully. Pour the batter into the previously obtained baking form (20 x 30 cm) and bake for approximately 25-30 minutes in 180 °C. When ready let the cake cool down on the rack for at least half an hour or more before preparing frosting.

For the frosting, beat the butter/baking margarine and cream cheese together until combine. Then add icing sugar and continue besting until you obtain a smooth, airy mixture. As a final touch add milk and mix once again. When the cake is cooled down decorate it with the frosting (remember, the cake has to be cooled down to room temperature, otherwise the frosting will melt). As a final touch, decorate with raspberries. Bon appetit! :-)

*If you like, you can apply some additional raspberry marmalade in between the cake and frosting. If you choose to do so, keep the cake covered with marmalade in a fridge for about half an hour before applying the frosting.
