Summer touch with last minute Blueberry-pie!

Very warm hello on this cold winter evening!

As winter evenings tend to be long and dark I often look for small things that bring me a little bit of summer feeling. :-) Blueberries are a sweet reminder of warm and sunny summer evenings, especially in form of delicious, warm pie crust and accompanied by vanilla ice cream! This very quick and simple recipe will bring a big smile into your face with absolutely no effort!


Pie crust:

340 g flour

175 g of cold butter or baking margarine (preferably cut into cubes)

165 of white sugar

1 egg

A little bit of salt

1/2 tea spoon of baking powder


500 g of blueberries ( I used frozen berries)

Zest from 1 lemon

1 table spoon of potato starch

White sugar (individually for the taste, can be omitted if blueberries are sweet)

Step by step:

Whisk together flour, sugar, salt and baking powder before adding cold, cubed butter. Mix all the ingredients using either pastry cutter or food processor (I use it often as it later makes dough come together in a form of ball that is easy to store in the refrigerator). You can also do it manually, or use for example two forks to cut the butter into dry flour mixture. Work on your dough until it contains multiple small chunks. Add one egg and continue to mix until the dough doesn't stick to your fingers (if it does, add a bit more flour). When ready, cut the dough into two halves and store one in the fridge. Prepare a baking form 24 cm x 24 cm by greasing it with butter (you can also fill the bottom with baking sheet). Roll half of the dough into the prepared baking form and pre-bake it for 10 minutes in 180 °C. After 10 minutes place the filling (blueberries mixed with lemon zest, sugar and potato starch) onto the warm dough and use the remaining, cold dough to apply the final touch, a crumble-like topping. You can grate it straight onto the blueberry filling. Place the dough back into the oven and bake for additional 30-35 minutes until the golden-brown color. When ready, let the pie cool down for a couple of minutes, before cutting into pieces. Oh, and don't forget about vanilla ice cream :-) Bon apetit!
