Sun-touched vanilla - lemon cheesecake!



Hello guys!


Today my favorite cheesecake recipe! No matter how many other versions of cheesecake I try and appreciate I finally always comes back to this one. It combines delicate vanilla taste with refreshing lemon touch. As simple as that! As delicious as that! :-)


Ingredients:


Bottom crunch layer


350 g flour

170 g butter/baking margarine

120 g white sugar

1 egg

2 egg yolks

1 tea spoon baking powder

12 g vanilla sugar / 1 tea spoon vanilla paste

A little bit of salt


Cheesecake layer


500 g cottage cheese

250 g butter (if cottage cheese already includes butter add less, about 50-100 g)

240 g icing sugar

50 g potato starch

1 egg

8 egg yolks

5 egg whites

lemon zest from 1 lemon

1/3 glass raisins

Topping: lemon glaze made by lemon juice and icing sugar


Step by step


Mix all the ingredients: flour, sugar, salt, eggs and butter/baking margarine either using food processor or manually. Then place the dough into a plastic wrap and let it cool down in the refrigerator for about 30-45 minutes.

In the meantime prepare the cheese layer. In a bowl whip 4 egg yolks with only half of the sugar (60 g). While continue whipping start to add the remaining egg yolks and icing sugar. In another bowl mix cottage cheese and butter. Combine, preferably in small portions the cheese-butter mix with the egg-sugar batter. Next, add the lemon zest and potato starch. Mix carefully. Finally whisk 5 egg whites and slowly combine it with the batter. As a final touch add raisins and stir manually, for example with wooden spatula. When ready, take the cooled down bottom crunch layer out of the fridge and roll approximately 2/3 of it into the baking form (30 cm x 20 cm) previously filled with baking paper. You may need to use some additional flour to prevent the dough from sticking to the surface. Pour the cheese-butter-egg mixture into the form. Finally, divide the remaining dough into a few thin slices and place them on top of the cheese layer so that they form a checkered pattern. Place the dough into the oven and bake it for approximately 55 minutes in 200 °C. After this time the surface of the cheesecake should turn golden - brown . :-) When ready let the cheesecake cool down and apply the final touch; the lemon glaze! Bon appetit! :)
